Zucchini Pesto Poached Egg Toast!! (recipe below)

When you get a new toaster, you make an epic toast! How cute is this @galanzamericas 2-Slice Retro Toaster? I just love retro appliances so much! Galanz has a whole collection — I also have their microwave! I’m especially fond of this toaster because it has slots big enough to fit my THICKKKK slices of sourdough.

TOAST RECIPE
2 slices sourdough
Pesto
1 large zucchini, diced
Olive oil
2 eggs
Parmesan, basil, and pepper to top

Toast your sourdough slices to desired crispiness (I set mine to 4!). Spread some pesto on each slice. In a large pan, heat up olive oil on medium heat and sauté zucchini with some salt and pepper. Add to your toast.

Poach your eggs by bringing water to a boil. Slightly lower the heat, add a splash of vinegar, and make a swirl. Crack each egg into a ramekin and gently lower into the water. Cook for about 4 minutes or until whites are cooked but yolk is still runny. Add 1 egg to each toast and top with a sprinkle of Parmesan, basil, and black and red pepper.
