Tikka Spiced Roast Chicken 🔥

I love a traditional roast but definitely need to spice it up sometimes! Here’s my go to recipe for when I need that spicy kick!
Served best with naan/basmati rice, a fresh salad and raita 💥

Ingredients
1 Large whole chicken (1.5kg), skin on (washed and patted dry)
1 Onion, cut in half

Marinade-
1 Lemon, juiced
1/2 cup Plain yogurt, whipped
2 tsp Garlic paste
1 tsp Ginger paste
3 tbsp Dry tikka masala seasoning, use 4tbsp for more spice (I use ‘Shan’)
1 tbsp Oil

Method –
Step 1 – In a bowl, combine all the ingredients for the marinade and stir well.set aside

Step 2 – In a large oven proof dish/tin, place the chicken and cut deep slits in the breast and legs (as seen in the video). Pour over the marinade, coat well and making sure it’s in the slits. Cover and refrigerate for 3-4 hours or overnight.

Step 3 – Heat the oven to 190C/fan 170C/Gas 5. Add 1/2 cup of water to the base of your dish, stuff with the onion (and lemon, optional), cover loosely with foil and place on the middle shelf. Cook for 1 hr and 10 minutes, basting with the juices 2 -3 times in between. Uncover and cook for a further 15 minutes (until the skin is crisp). Check with a meat thermometer that it’s cooked through.

Step 4 – Let it rest for 15 minutes and serve!!!! Enjoy!! 🍗
