Thai Green Prawn Curry 🌿

SUPER EASY Thai green curry recipe, made with the most juiciest king prawns.

Ingredients – serves 4
600g Frozen raw king prawns, defrosted, from @seafoodbysykes (Ad)
1 1/2 tbsp Thai green curry paste
400ml Coconut milk
1/2 cup water (optional)
1 tsp Palm sugar or brown sugar
1 tbsp Fish sauce
1-2 Kaffir lime leaves
1 Red chilli, cut into slits
A handful of Mangetout
A handful of Tender stem broccoli
A handful of Baby corn, sliced through the middle, lengthways
2 -3 tbsp Fresh coriander, finely chopped
1 Lime, juiced (optional)

Method
Step 1 – In a large pot, on medium heat, add a splash of oil, once hot, add the green curry paste and fry for a minute. Now add the coconut milk and bring to a slight boil. Add the fish sauce and palm sugar.

Step 2 – Add the baby corn, mangetout and red chilli and simmer for 5 minutes. Now add the prawns, kaffir lime leaves and broccoli, cover and simmer for a further 10 minutes.

Step 3 – Top with fresh coriander and a squeeze of lime juice! Serve with jasmine or basmati rice!
