Spicy egg omelette in a crispy flatbread 🌶 (anda paratha)

Some mornings I crave a Pakistani style breakfast. A spicy egg omelette wrapped in a paratha is just so comforting! 🍳
I’ve used @humzahalalfoods frozen parathas which are super delicious and easy to make. (Ad)

Ingredients
1 – 2 Eggs
1 tsp Spring onions, finely chopped
2 Cherry tomatoes, finely chopped
Fresh coriander, finely chopped
Fresh green chilli, finely chopped
Salt, a pinch
Garam masala, a pinch
Red chilli powder, a pinch
Cumin seeds, a pinch
For frying – 1 tsp Ghee (I use @happybutterghee)

Method
Step 1 – In a small bowl, crack an egg and add all the fresh and dry ingredients. Whisk well to combine. In a small pan, on medium heat, add the ghee, once it’s melted, pour in the egg mixture. Fry on both sides till done! Take it out of the pan and set aside.

Step 2 – In the same pan, on medium heat, add the frozen paratha. Cook on both sides till golden and crispy!

To serve – On a plate, place the paratha and add the omelette. Fold over and cut in half! Enjoy!! Yummmmehhhhh
