Smoky Confit Beans with Sundried Tomatoes and Dates!!!

This recipe is a riff on @lukasvolger’s recipe from his cookbook Snacks For Dinner, which has really been making the rounds in the Rancho Gordo Bean Club Facebook group (yes, I’m in a Facebook group about beans

The beans cook in some oil, garlic, smoked paprika, sundried tomatoes, dates, and oregano, and they get soft on the inside but crispy on the outside! I topped mine with a little bit of cotija and scallion for some extra oomph. This dish is best served as a dip on some nice crusty bread!
