Shaved Brussels Caesar Salad with Spiced Oyster Mushrooms!

I find brussels sprouts to be so much tastier raw than cooked, and they are the perfect vessel for a Caesar salad! I added some crispy oyster mushrooms on top for some texture, and of course lots of Parmesan cheese.

I make my Caesar with mayo instead of raw yolk, which I know isn’t the classic prep but it works just as well and gives me a little peace of mind!

RECIPE (serves 2)

Salad
4 cups shaved brussels sprouts
1/3 cup grated Parmesan
Olive oil

Mushrooms
1 tbsp olive oil
4 oz oyster mushrooms, broken up into pieces
1/2 tsp smoked paprika
Pinch of salt
Pinch of red pepper
Black pepper

Caesar Dressing
4 anchovy filets
4 medium cloves garlic, finely minced
2 tbsp Dijon mustard
1 1/2 tbsp mayo
Juice of 1 lemon
3 tbsp olive oil

Prepare your oyster mushrooms first. Heat up olive oil on medium high heat. Add your mushrooms and seasoning, and saute until brown and crispy, stirring occasionally.

In a large bowl, add the anchovies and minced garlic. Using two forks, mash the anchovies with the garlic to break them down. Add the mustard, mayo, and lemon juice, and whisk together until smooth. Break up the anchovy pieces, if needed. Slowly whisk in the olive oil.

Add your shaved brussels to the bowl along with the Parmesan cheese and toss to evenly coat. Plate, and top with mushrooms and black pepper.
