salted caramel apple puff pastry using the viral upside-down method! my favorite fall flavor is undoubtedly caramel apple, and add that little touch of salt and I just melt!

i made a salted caramel using one of my old recipes — it’s made with coconut milk, coconut sugar, vanilla, and sea salt, so even if you don’t make this recipe, you can save the caramel recipe for later!

all you need for this is some store-bought frozen puff pastry, apples, and your homemade salted caramel sauce!

RECIPE (makes 6 tarts)

Salted Caramel
½ cup full-fat coconut milk
¼ cup light brown sugar or coconut sugar
½ tsp vanilla
½ tsp sea salt

Pastry
2 apples, cored and cut into thin 1/2 inch slices
1 sheet puff pastry (14 oz) cut into 6 pieces
1 egg
Optional: powdered sugar

1. Preheat oven to 400 F. Prepare the salted caramel first. In a small saucepan, bring ingredients to a boil. Reduce heat to low, and simmer for about 10 minutes until sauce has thickened and caramelized.

3. Line 1-2 baking sheets with parchment paper. To make a pastry, drizzle some caramel onto the parchment paper, top like 5 apples slices, and place a piece of puff pastry over the apples. Press down the sides with a fork and poke a few wholes into the pastry dough.

4. Transfer to the oven and bake for 15-20 minutes until pastry is golden brown. Remove from oven, and let cool slightly before carefully flipping over with a spatula. Top with powdered sugar, if desired.
