rainbow veggie kale bowl with basil vinaigrette!
made with massaged kale, crispy chickpeas, roasted sweet potatoes & grape tomatoes, sauerkraut, pickled onions, feta, and a simple basil dressing!

to make: add chickpeas, sweet potato, and tomatoes to a baking sheet and toss in a little bit of olive oil. sprinkle on some salt & bake at 425 F for 25-30 min until chickpeas are crispy and sweet potatoes are fully cooked.

massage some kale and add it to a bowl. top with your roasted veggies, some sauerkraut (I used @sonomabrinery dill & garlic), pickled onions, and feta.

to make dressing (for 2) I blended a big handful of basil, 2 tbsp olive oil, juice of 1 lemon, and 1 tbsp red wine vinegar. Taste & adjust as needed (you can add a little honey since it’ll be tangy, but the sweet potatoes and sweet pickled onion balance it out in the bowl)
