Prawn Masala 🦐

I like to whip this up on those busy busy days, it’s simple, delicious and on the table in 30 minutes! 🌶

Ingredients – serves 2
250g King prawns (fresh or defrost from frozen)
1/4 cup Corn oil
4 Tomatoes, blitz
3 Garlic cloves, minced or grated
1/2 inch piece Ginger, grated
1-2 Red/green chillies, deseeded, cut into chunky slices
1 tsp Salt, or to taste
1/2 tsp Garam masala (Shan brand)
1/4 tsp Turmeric powder
1 tsp Coriander powder
1/2 tsp Cumin powder
1/4 tsp Red chilli powder, or to taste
2 tbsp Natural yogurt
1/4 cup Water
Fresh Coriander, chopped finely
Fresh ginger, finely sliced (optional)

Method
Step 1 – In a pan, on medium heat, add the oil. Once hot, add the blitz tomatoes. Keep stirring until the water starts to evaporate and the oil starts to separate from the tomatoes. Now add the garlic and ginger, frying till fragrant. Next add the dry spices and fry for a further minute.
Now we add the yogurt, mixing in well with the masala and frying for another minute.

Step 2 – Add the prawns and chillies to the masala and stir fry for a few minutes, then add the water, stir and simmer for 10-15 minutes (or until the prawns have cooked through).

Step 3 – Top with the fresh coriander and ginger. Enjoy ☺️
