Potato Arugula Salad with Tomato Confit!

This recipe is a cross between a regular salad and a potato salad! Think of it as a potato salad heavy on the greens or as a green salad heavy on the potatoes!!

Potatoes are roasted along with a tomato confit and tossed with arugula, chickpeas, red onion, feta, basil, and parsley! I love the tomato confit in here because the oil acts as a dressing!! Just add a splash of red wine vinegar and you’re good to go!
