the best when you wanna spruce up a quick dinner — just use packaged tortellini and throw in all the veggies and herbs you’ve got! I used @kitehillfoods plant based ricotta tortellini in this one.

to make, cook your tortellini according to package (make sure to salt your water and reserve some pasta water at the end)

while tortellini is cooking, sauté 1/2 a yellow onion in olive oil on medium heat; and after a few minutes, add a pint of cherry tomatoes and some salt and pepper. cook for an additional 6-7 minutes until tomatoes are just starting to burst (you can help them along by crushing them with the back of a spatula). Add in some fresh basil and a big handful of arugula, and add a little splash of pasta water.

mix in your tortellini and remove from heat( my camera shut off during the adding of the tortellini wahh).
