Persian Chicken Kebabs
(Joojeh kebab)

I’ve grown up eating Persian food, it’s comfort food for me!!!
Here is the recipe of one of my favourites, Joojeh kebabs, delicious tangy pieces of juicy chicken! andddd I made them in my @instantpotuk Vortex dual air fryer! EPIC.. (Ad).

Ingredients
800g Boneless chicken thighs, cut into 1 inch pieces
Wooden skewers (soaked in water for an hour)
4-5 Tomatoes, whole
1 Small brown onion, grated
4 Garlic cloves, grated (large ones)
1 tsp Salt
1 tsp Ground black pepper
1 tsp Smoked paprika
1/4 tsp Turmeric powder
1/2 tsp Saffron (steep in 1/4 cup of warm water)
3 tbsp Plain yogurt
1 Lemon, juiced
2 tbsp, Butter (melted)
Fresh mint leaves, torn

Method –
Step 1 – In a large bowl, add the chicken pieces, onion, garlic, black pepper, salt, turmeric, paprika , yogurt, half of the lemon juice and 3 tbsp of the saffron water.
Mix in well and marinade for an 1 hour.

Step 2 – Thread in 5-6 pieces of chicken on each skewer. In a little bowl, melt the butter and mix in with the saffron water and lemon juice. Now, Turn on the air fryer and set it to 205°C. Once hot, add in the chicken kebabs and whole tomatoes. Cooking takes 20-22mins, half way through the cooking time, baste with the butter and saffron, turn and repeat the basting. Once done, check they are cooked through.

Step 3- Serve with buttered white rice, those flavour exploding tomatoes and sprinkle over some mint leaves! The BEST. Enjoy 😊
