PEANUT BUTTER & PRETZEL STUFFED DATES!!!! 🥨
@dadaeats had me craving chocolate stuffed dates (recipe adapted from her!), and when I saw @grantprettyman eating peanut butter pretzels the other day… I knew I had something!!
I used semi-sweet chocolate chips here, which you can def do if you like sweet sweets. I think next time I would switch to dark chocolate since the dates are sweet enough 😇
RECIPE
10 medjool dates, pitted
1/2 cup chocolate chips or dark chocolate, chopped
1 tbsp coconut oil
Peanut butter
Handful of mini pretzel twists
Cut a slit down the top of your dates (almost like you’re cutting them in half lengthwise without cutting fully down). Crush your pretzels into small pieces. Add a scoop of peanut butter inside each date, and add in a couple pretzel pieces.
Heat up chocolate and coconut oil on low heat, stirring frequently until melted. Remove from heat. Dip the dates into the chocolate and coat the dates completely. Add to a plate lined with parchment paper. Crush your pretzels even more, and sprinkle them over the dates while the chocolate is still wet (you can add some flake salt here too)! Freeze for 25 min, and let cool slightly before eating! Keep stored in the freezer
