To make this, I cooked some bacon in a pan (I like to do low heat, low and slow & turn frequently). Then when the bacon was done, I removed it from the pan and turned the heat up to medium high and cooked some white mushrooms & oyster mushrooms.

While the mushies are cooking, you can make the poached egg! Fill up a pan with a few inches of water and bring to a soft boil. Crack an egg into a ramekin. Add a splash of vinegar and swirl the water in the pan, lower the egg gently into the swirl, and cook for 3-5 minutes until whites are fully set. Remove with a slotted spoon!

Use a scoop of cooked brown rice (I usually do it in the pressure cooker), and add your mushrooms, bacon, and poached egg to a bowl. Top with a sprinkle of feta, parsley, and dill. I like to add a little drizzle of olive oil at the end with some black and red pepper.
