Minted Chicken Tikka 🌿

I love chicken tikka as it is but decided to shake things up a bit!💥
Exploding with gorgeous fresh flavours for this season but still giving you those delicious chicken tikka vibes!! YUM!
And of course so so soooo easy to make!
*Serving suggestion – salad and chips!

Ingredients
1 kg Chicken thighs, bone in, skin on
3/4 cup Natural yogurt
1 tbsp Vegetable oil
1 Lemon juiced
1 tsp Garlic paste
1/2 tsp Ginger paste
2 tbsp Chicken Tikka seasoning (dry)
2 tbsp Dried mint
1 tsp Dried fenugreek
1 Large onion, cut into wedges
2-3 Sweet peppers, whole

Method –
Step 1 – In a large bowl/dish, combine the yogurt, oil, garlic, ginger, tikka seasoning, mint, fenugreek and lemon juice. Stir well.
Next cut a couple of slits into each chicken piece. Add to mixture, coat well. Cover and marinade for an hour or overnight in the fridge.

Step 2 -Preheat oven to 190C/170C fan/gas 5. In a large oven proof dish, add the chicken and the marinade, leaving some space between them. Next add the onions and sweet peppers. Cover with foil and cook for 35 minutes (basting half way through). Uncover, baste, and cook uncovered for a further 15 minutes (or until the chicken skin is crispy/charred.)

Step 3 – Serve with chips and a salad! Enjoy!
