Masala Lamb Chops 💥

Here’s your sign to make Masala chops!!! ✨A rich and spicy masala, tender lamb chops, cooked to absolute perfection. This is my comfort food.

Ingredients
1/3 cup Vegetable oil
1kg Lamb chops
2 Tomatoes, roughly chopped
1 Medium onion, finely sliced
2 Green/red chillies, chopped (optional)
Fresh coriander, finely chopped

Marinade-
1/2 cup Natural yogurt
1/2 a Lemon, juiced
2 tsp Garlic paste
1 tsp Ginger paste
2 tbsp Tandoori masala
1 tbsp Cumin powder
1 tbsp Coriander powder
1 tbsp Kashmiri Red chilli powder
1 tsp Garam masala
1 tsp Crushed black pepper
1 tsp Salt, or to taste

Method
Step 1 – In a large bowl, combine all the ingredients for the marinade, stir to combine and then add the lamb chops, coating them well. Cover and refrigerate for 2 hours or overnight. Remove from the fridge 30 minutes before cooking.

Step 2 – In a large pan, on high heat, add the oil. Once hot, place the chops in, leaving a little space between them. Fry on both sides until they have browned (not cooked through). Remove from the pan and set aside.

Step 3 – In another large pot, add in the oil you fried the chops in and the chops. Next add the tomatoes, onions, chillies and 1/2 cup water. Gently stir. Bring to a boil, now cover with a lid and cook for 35 minutes on low heat. Next, remove the lid and turn the heat up to medium/high. Add 2 tbsp Fresh coriander and cook for a further 10 minutes, gently stirring continuously (until the sauce has thickened).

Step 4- Remove from heat, add more fresh coriander, cover and let it rest for 15 minutes. Serve with fresh naan or basmati rice! Enjoy!
