Last week, I got to try salmon grown directly from fish cells!

This salmon isn’t farm-raised, plant-based, or wild-caught — it’s the world’s first cultivated salmon from @wildtypefoods!! As someone who is OBSESSED with salmon but who also cares about the future of our planet, I was stoked to be able to try this out myself! We had a 3-course omakase menu consisting of nigiri, a cut roll, and a chirashi-inspired bowl, and I was shocked at how similar the fish tasted to the real deal! It made me very excited to see how we can meet demand for seafood without destroying our oceans in the process.

One of the coolest things about cultivated salmon is that you still get all the health benefits of regular salmon without all the yucky stuff like microplastics, mercury, and parasites. I’m sure this might seem wild to you, but this is the future of our food system, and I think it’s pretty incredible!
