Korean Fire Chicken

Hot, spicy, cheesy, 🔥 KOREAN FIRE CHICKEN🔥. So easy to make and totally delicious!

Ingredients
600g Boneless chicken breast or thighs- cut into bite sized pieces
150g Sliced rice cake (optional)
Cooking oil
1/4 cup Water

Marinade-
1/4 cup Gochujang
1/4 cup Gochugaru
1/4 tsp Salt
2 tsp Garlic, minced
1 tsp Ginger, finely grated
1 tbsp Sesame oil
2 tbsp Rice syrup or honey
2 tbsp Soy sauce

Topping
1-2 cups Mozzarella (optional)

Garnish – 2 Spring onions, green part only, finely sliced

Method
Step 1 – In a bowl, add all the ingredients for the marinade. Whisk to combine! Next, add the marinade to the chicken and mix well to coat. Cover and refrigerate for an hour or overnight.

Step 2 – In a large oven proof pan, on medium heat, a tbsp of cooking oil – once hot, add the rice cakes and lightly fry for 2 minutes or until a little crisp. Remove from the pan and set aside.

Step 3 – In the same pan add another tbsp of cooking oil, once hot add the chicken. Add 1/4 cup of water into the chicken bowl, give it a swirl to get the rest of the marinade off and pour into the pan. Stir,cover and cook for 10 minutes- making sure you stir halfway through.

Step 4 – Check the chicken is cooked through and remove from the heat. Now top with the rice cakes and then the mozzarella.
Pop into the oven and broil/grill until the cheese has melted. Remove from the oven and top with green onions and serve! Enjoy!
