kimchi egg salad toast!!! I’ve been eating this one on repeat because it’s so minimal & so easy, but it’s also sooo delicious and I love getting my probiotics first thing in the morning! Kimchi is a traditional Korean dish of salted and fermented vegetables, usually cabbage, cucumber, or radish. It has a salty, complex flavor, and it’s so delicious as well as nutritious!

all you do is mix soft boiled eggs with a scoop of mayo and kimchi and then serve it on sourdough toast (herbs optional but always recommended 😝).

To make my soft boiled eggs, I bring water to a boil, then add the eggs. Cook for 7-7:30 minutes, and then immediately submerge in an ice bath. Let cool before peeling. Mash with a fork and add a little mayo and kimchi!! I topped mine off with parsley and dill
