Jerk Shrimp

Bursting with sweet and spicy flavours, this simple recipe is about to tantalise your taste buds! 🦐

Ingredients- serves 4
500g Frozen shrimp (defrosted) or fresh
1 1/2 tbsp Jerk seasoning
2 tbsp Corn oil or spray oil
1-2 Red peppers, sliced
1-2 Red onions, sliced (thick)
6 Slices Pineapple, tinned or fresh and halved.
1 Red chilli pepper, deseeded and finely sliced (go with scotch bonnet if you like heat!)
A handful of chopped coriander
1 lime, cut into wedges

Serving suggestion – White or brown steamed rice.

Method –
Step 1 – In a large bowl, add the shrimp, red
Peppers, onions, and pineapple. Add the oil and jerk seasoning. Toss well to combine.

Step 2 – In a large griddle pan, on medium heat, spray a little oil and add the shrimp and cook until charred and cooked through, remove from the pan and set aside. Add the veg and pineapple and cook until charred. Alternatively, Preheat oven to 190C/170C fan/gas 5. On a large oven tray, spread out the shrimp combo. Roast for 15-20minutes.

Step 3 – Top with coriander, red chillies and a squeeze of lime juice. Serve with your choice of rice!! Enjoy!!
