introducing my favorite dip of all time!!! CARAMELIZED ONION GREEK YOGURT DIP

she’s healthy, she’s easy, and she was born to impress!!! this luscious dip first made her debut in 2020, but she’s coming out of the shadows to become the IT girl of the summer.

It’s seriously so simple to make — just onions, Greek yogurt, onion salt, and chives — I served mine with salt and pepper kettle chips, but it also would go great with a veggie platter!!

RECIPE
1 tbsp olive oil or butter
1 medium yellow onion, thinly sliced
1 cup Greek yogurt (I like to use whole milk Greek yogurt, but you can use any type you want)
1 tbsp Trader Joe’s onion salt*
Optional: chopped chives

*If you don’t have the Trader Joe’s onion salt, I recommend using 2 tsp onion powder, 1/2 tsp garlic powder, and 1/4-1/2 tsp salt (start with 1/4 and taste from there, add as needed).

1. Heat olive oil/butter in a medium/large pan on medium heat until oil is hot. Add the onions, and coat with the oil. Turn the heat down to medium-low, and let the onions cook. Stir every 10 minutes to prevent burning. You’ll want to cook the onions for about 30-50 minutes until they’re sticky and brown. If they start to dry out, burn, or stick to the pan, add a little water for moisture.

2. When onions are caramelized, set a spoonful aside. In a medium bowl, mix together Greek yogurt, caramelized onions, and onion salt. Add to a serving bowl, and top with the remaining caramelized onions that had been set aside for garnish. Finish off with some black pepper and finely chopped chives, if desired.
