~ Spicy Tuna Spaghetti ~
Recipe below! 🌶

Ingredients (serves 2)
1 can Tuna (drained well)
250g Quick cook spaghetti
3 tbsp Olive oil
1 medium Onion, finely chopped
1 tin Chopped tomatoes (400g)
3 Garlic cloves, minced
1 tsp Salt
1 tsp Ground black pepper
1 tsp Red chilli flakes ( or half for less heat)
1/4 cup Black olives (pitted)
2 -3 tbsp Fresh parsley, finely chopped
50g Parmesan, grated

Step 1 – In a medium sized pan, on medium heat, add the olive oil. Once hot, add the onions and garlic. Sauté till the onions have become soft and golden. Now add the tomatoes and simmer for 5 mins.

Step 2 – Start cooking your spaghetti (as per packets instructions).

Step 3 – Add the salt, black pepper, red chillies, and tuna to the tomato sauce. Simmer for 3 minutes, then add the black olives and 1 tbsp parsley.

Step 4 – Reserve 2 tbsp of your spaghetti water and drain the rest off.
Add the water to the sauce and mix in the spaghetti. Top with more parsley and parmesan! Enjoy!
