Honey Soy Glazed Chicken 🍗

Ingredients
1.5 kg Chicken thighs (with skin, with or without bone)
1/3 cup Honey
1/2 cup Dark soy sauce
1/4 cup Spring onions, finely sliced
2 tbsp Corn oil
1 tsp Sesame oil
4 Garlic cloves, minced
2cm Fresh ginger, minced
1 tbsp Rice wine vinegar
1/2 tsp Salt
1 tsp Ground black pepper
1 Red birds eye chilli, finely sliced (discard seeds for less heat)
Fresh coriander, finely chopped

Method
Step 1 – In a large bowl, combine the honey, soy sauce, spring onions, red chilli,corn oil, sesame oil, rice vinegar, garlic and ginger. Whisk and set aside.
Step 2 -Dry the chicken with paper towels. Season with salt and pepper. Add the chicken to the marinade. Marinade the chicken for at least 30 minutes (longer if you can).
Step 3 – Preheat the oven to 220°C. Add the chicken with the marinade to a baking dish. Bake for 25-30 minutes, turning half way.
Broil for 5 minutes on high heat until the chicken is golden brown and a little charred.
Step 4 – Garnish with chopped coriander and more chillies if you like!
Serve with steamed rice, noodles or even a salad! Enjoy!
