Healthy Chocolate Lava Cakes Topped with Enlightened Ice Cream!!

Couldn’t pick just one flavor of ice cream to use, so I used 3!!! Coffee Toffee, Brownies & Cookie Dough, and P.B Cookie & Brownie Dough, all from @eatenlightened.

Both the lava cake and the ice cream are low in sugar but still so rich and so creamy. I also made the base of the lava cake with oat flour, so you can basically eat this for breakfast (I won’t judge). I love the combo of a hot, gooey cake with some melty ice cream — give yourself a treat everyday, you deserve it!!

RECIPE (makes 3 mini lava cakes)
¾ cup oat flour (just blend your rolled oats into a fine powder!)
½ cup cocoa powder
1 ½ tsp baking powder
¼ tsp salt
3 eggs
¾ cup plant milk (I used oat)
3 tbsp coconut oil, melted (measure out 3 tbsp solid, then melt it)
1 ½ tsp vanilla extract
2 ½ tsp maple syrup
3 squares dark chocolate (I used 70%)
3 scoops @eatenlightened ice cream

1. Preheat oven to 350 F. In a large bowl, mix together oats, cocoa powder, baking powder, and salt. Then add in eggs, plant milk, coconut oil, vanilla, and maple syrup. Mix until everything is thoroughly combined.

2. Pour batter into 3 mini cocotte or ramekins, and add a dark chocolate square into each. Bake for 18-20 minutes or until cake is cooked on the outside but still jiggles (don’t overcook, you want the inside to still be gooey. But you don’t want it to collapse either).

3. Top with your favorite @eatenlightened flavors, and I definitely recommend some of their newest!!! The Coffee Toffee was my favorite, but they have so many good ones!
