Stop everything you’re doing and make a shopping list! 👩🏻‍🍳
Slow cooked, falling off the bone, Moroccan inspired lamb shanks in a flavour exploding sauce!
Served best with crispy cumin potatoes or couscous.

Ingredients –
2 Lamb shanks
4 Garlic cloves, minced
1 Brown onion, finely sliced
1 Dried lime, or 1 tsp lime zest
1 tbsp Harissa paste
1 tsp Cumin powder
1 tsp Coriander powder
1 tsp Cinnamon powder
1/2 tsp Turmeric powder
Salt, to taste
400g Tinned chopped tomatoes
600ml Lamb or chicken stock
2 tbsp Olive oil
Pomegranate seeds
Fresh coriander, finely chopped

Method
Step 1 – Season the lamb shanks with a little salt & pepper. In a pan, on high heat, add the oil, once hot, place the lamb shanks in, searing all sides. Remove from the pan and set aside.

Step 2 – In another medium sized pot, on medium heat, add 1 tbsp of oil (from the searing pan). Once hot, add the onions and garlic, frying till soft and fragrant. Next add all the powdered seasonings, and harissa paste, mixing in well and frying for a minute. Now we add the tomatoes, stock and dried lime. Mix well and add in the lamb shanks, pouring some of the sauce over them. Cover and set to low heat, cook for 2 hours.

Step 3 – Remove from the heat. When plating, top with fresh coriander and pomegranate seeds! Enjoy!
(If you have used a dried lime, you can now discard it).
