Harissa cod with baby potatoes & green beans

Good Friday meal inspo alert! 🌿
Deliciously succulent Cod loins marinated in a flavour bursting Harissa sauce. Served with garlicky baby potatoes and green beans to make it the star meal of the day!

Ingredients – serves 4
4 @seafoodbysykes Frozen Cod loins (defrosted) {AD}
1 Lemon, juiced and some lemon slices
2 tbsp Rose Harissa Paste (optional- for less heat, mix in 1 tbsp natural yogurt)
900g Baby potatoes
450g Green beans, ends trimmed
3 tbsp Butter, melted
3 Garlic cloves, minced or grated
1 tsp Salt
1 1/2 tsp Smoked paprika
1/2 tsp Ground black pepper
Fresh coriander, finely chopped

Method –
Step 1 – In a small bowl, add the harissa paste and lemon juice, mix in well. Brush the mixture generously onto both sides of the cod loins. Marinade for 30 minutes.

Step 2 – Boil the baby potatoes for 15 minutes in salted water, drain and transfer to a large bowl. Add the salt,smoked paprika,black pepper and toss to coat. Now add the butter and garlic and mix in well.

Step 3 – Preheat the oven to 200°C/fan 180°C/gas mark 6. In a large baking tray or oven proof dish, add the potatoes and green beans, spreading them out. Gently place the cod lions on top of the vegetable layer and place a lemon slice on each piece of cod. Roast for 15-20 minutes.
Remove from the oven and serve immediately, garnish with fresh coriander leaves.
