I consider myself a “flexitarian,” meaning I don’t eat or make much meat, especially at home, but I still eat everything from time to time (although maybe it should be called flexi-pescatarian, as I do eat a lot of fish)! I never really liked steak until I discovered hanger steak, and it’s definitely my preferred cut!

this preserved lemon salsa verde is actually more a cross between an Italian salsa verde and a chimichurri (I added some red wine vinegar in there for some extra tang). If you don’t have preserved lemon, you can always do some lemon juice and salt instead!
