Garlic Parmesan Potatoes with Pepperoncini Dipping Sauce! I’ve been making these potatoes over and over, so they had to be shared!!! Potatoes forever!!! 🥔

Potatoes
2 cups chopped gold potatoes
2 tbsp olive oil
1 tsp garlic salt
4 cloves crushed/finely minced garlic
2 tbsp roughly chopped parsley
⅓ cup finely grated Parmesan

Pepperoncini Dipping Sauce
2 tbsp mayo
1 tbsp finely chopped pepperoncini
1 tbsp pepperoncini brine (liquid from the jar)
Salt & pepper

1. Preheat oven to 425 F. Add potatoes to a parchment paper lined baking sheet, and toss in oil and garlic salt. Bake for 25 minutes, then flip and bake for another 5-10 minutes or until potatoes are just starting to crisp.

2. While potatoes are cooking, prepare the pepperoncini dipping sauce. In a small bowl, add mayo, chopped pepperoncini, and pepperoncini brine, and whisk together until smooth.

3. When potatoes are done, add to a large bowl, and toss with garlic, parsley, Parmesan, and salt and pepper. Serve warm with the dipping sauce on the side!
