garlic lemon parm kale salad with grilled chicken! this is THE kale salad of all kale salads that will truly convert anyone.

modeled off of the @livetruefood kale salad, this has been my go-to for years, and it never lets me down. I’ll give you a basic recipe, but it’s really one that you have to just taste and adjust. And I say that because that’s how I make it every time 🤣 it builds confidence in the kitchen to just adjust as you go!! But here are the building blocks:

RECIPE (serves 2!)
2 bunches kale (can use curly or tuscan)
Olive oil
Salt
4 cloves garlic, finely minced until they become a paste
2-3 lemons
1/2 cup to 1 cup grated Parmesan (your choice, I like mine v cheesy)
1/4 cup breadcrumbs
2 boneless skinless chicken breasts
Black & red pepper

Remove kale from the stem, and roughly chop. Add to a large bowl along with some olive oil and salt, and massage with your hands until kale leaves are soft. Add in the garlic paste along with lemon juice, (start with 2 lemons, and then taste test once other ingredients are added), Parmesan, and breadcrumbs. Toss together, and taste. At this stage, I’ll usually add a little more olive oil, salt, and tbh probably more Parmesan if I only started with a 1/2 cup. If it needs more lemon, I add it too. I don’t always measure, and I just taste test.

To make chicken, oil your grill pan or grill on medium high, sprinkle your breasts with salt, pepper, and red pepper, and then cook for 4ish minutes on each side. Add to your salad, and finish off with a little more parm and pepper!
