Fiery Aubergine Pasta
It’s a hot one! 💥

I don’t know about you guys but I need to eat pasta at least once a week and with A LOT of cheese! 🧀
This homemade aubergine and tomato sauce is a match made in heaven for pasta!

Ingredients – serves 4
3 tbsp Olive oil
500g Rigatoni (or your choice)
1 Large Aubergine, cut into chunks or bite sized pieces
1 Onion, diced
4 Garlic cloves, minced
600g Passata
1 tbsp Tomato purée
200g Cherry tomatoes, cut into halves
1 Bay leaf
1 tsp Dried basil
1 tsp Dried Oregano
1 tsp Salt, or to taste
1 tsp Sugar
1 tsp Black pepper
1 tsp Red chilli powder, or to taste
A handful of fresh Basil, chopped
1 Red chilli, deseeded, finely chopped
Mozzarella, grated/torn
Mature cheddar, grated

Method –
Step 1 – In a medium sized pan, on medium heat, add the olive oil, when hot, add in the onions and sauté until they have softened.
Now add the garlic and sauté till fragrant. Turn the heat to high, and add the aubergine, and all the dry seasonings (except the sugar & bay leaf). Stir fry for 5 minutes.

Step 2 – Next, turn the heat to low, add the passata, tomato purée, cherry tomatoes, fresh basil, sugar and bay leaf. Cover and simmer for 20 minutes.

Step 3 – Cook your pasta as per packets instructions and reserve 1-2 cup of the pasta water. – In a large oven proof dish, add the pasta, water and sauce. Mix in well. Top with the mozzarella, mature cheddar and scatter the red chillies!

Step 4 – Pop under the grill until the cheese is golden and bubbly! Serve and enjoyyyy!
