Chinese Lemon Chicken

This was my favourite dish to order from a Chinese restaurant. I no longer order it because I make it myself! 🍋
I made the crispy chicken pieces in my new Vortex plus dual Air fryer from @instantpotuk, so it’s a super healthy version too! (Ad)

Ingredients
Crispy chicken –
600g Chicken boneless breast or thighs, cut into bite sized pieces.
1/2 tsp Salt
1/2 tsp Ground black pepper
1/2 tsp Garlic powder
1 cup Corn flour
Cooking spray

Lemon sauce-
1 tbsp Sesame oil
2 Garlic gloves, minced or grated
1/2 inch piece Ginger, finely grated
1/4 cup Dark soya sauce
2 tbsp Dark brown sugar
1 cup Chicken stock
1 tsp Corn flour (mix into the chicken stock)
1 Lemon Juiced and zested.
Garnish-
Sesame seeds
Finely sliced, spring onions (optional)

Method
Step 1 – Season the chicken pieces with salt, pepper and garlic powder. Then coat well in the corn flour. Set your air fryer to 205 degrees. Place the chicken pieces in the basket, leaving some space between them and spray with the cooking oil. Cook for 10 minutes, turning halfway through and spraying again with oil.
Once done, remove and set aside! (Do this in batches).

Step 2 – In a pan, on medium heat, at the sesame oil, once hot, add the garlic and ginger, sauté till fragrant. Next add the soya sauce, sugar and stir. Then add the chicken stock mixed with the corn flour. Now add the lemon juice and zest. Keep stirring, it will start to thicken.

Step 3 – Add the chicken pieces to the sauce and mix in well. Garnish with sesame seeds and spring onions, serve with your favourite rice or noodles!
