Chilli Paneer 🌶

I love paneer whether it’s grilled, fried, in a curry, you name it! This is a super quick recipe that’s ready in 15 minutes and is enjoyed by the whole family!

Ingredients
200-250g Paneer, slice length ways down the middle of the block then, cut into 1 inch pieces
2 tbsp Butter/ghee
3 Garlic cloves, minced/finely grated
2 cm piece Ginger, finely grated
1 Mild green chilli, roughly chopped
1 heaped tbsp Tomato purée
1 Large onion, cut into chunks
1-2 Bell peppers, cut into 1 inch cubes
1 tsp Cumin powder
1 tsp Coriander powder
1 tsp Kashmiri chilli powder, or to taste
Salt, to taste
1/2 tsp Black pepper powder
1 tbsp Corn flour, mixed into 1/4 cup water.
Fresh coriander, finely chopped

Step 1 – In a pan, on medium/high heat, add a dash of oil or butter and fry the paneer pieces until golden. Remove and set a side.

Step 2 – In the same pan, on medium heat, add the butter, once melted, add the green chillies, garlic and ginger. Sauté till fragrant.
Now add the tomato purée and sauté for a minute, next add all the dry seasonings and sautés for another minute.

Step 3 – Add the bell peppers and onions to the pan and stir-fry for a few minutes, now add the paneer and stir-fry for another minute. Now add the corn flour slurry, mix in well and cook for a few more minutes. Top with fresh coriander and serve!
Enjoy with parathas, roti, naan, rice, whatever you like really!!
