— Chicken Jalfrezi —

A mildly spiced curry with a whole load of flavour, a perfect family meal! I haven’t met anyone who doesn’t like a jalfrezi! There are so many different recipes around but this is how I cook mine!… Restaurant style! 💥

Ingredients
500-600g Chicken breast, cut into thin-ish strips.
1/4 cup Oil
1 Brown onion, finely diced
4 Garlic cloves, minced
1/2 inch piece Ginger, grated finely
4 Tomatoes, blitzed
1 tsp Tomato purée
1 tsp Salt (or to taste)
1 tsp Cumin powder
1 tsp Coriander powder
1 tsp Smoked paprika
1/2 tsp Garam masala
1/2 tsp Tumeric powder
1 tsp Red chilli powder (or to taste)
2 Green chillies, whole or deseeded
2 Bell peppers (yellow/green), cut into slices
1 Red onion, cut into slices
Fresh coriander, garnish

Method
Step 1 – In a medium/large sized pot, on medium heat, add the oil. Once hot add the brown onion, and cook till golden. Add the garlic and ginger, fry till fragrant. Next add the tomato purée and give it a quick stir. Then add all the dry seasoning and mix.

Step 2 – Add the chicken, mixing it well into the spices and stir fry on high for 5 minutes. Now add the tomatoes, mix well.Turn the heat down, cover and simmer for 20 minutes.

Step 3 – Remove the lid, and add the chillies, bell peppers, red onions and stir. Cover and cook for a further 7-8 minutes. Done! Garnish with coriander and serve with rice or naan! Enjoy
