Chicken Drumsticks – Lebanese style 🌿

Easy dinner alert! – These perfectly crisp and juicy chicken drumsticks are so easy to make, made with a Middle Eastern spice blend which gives those earthy and exotic flavours!
Best served with a salad, flatbread and yogurt dip! DELICIOUS! 🍋

Ingredients
1kg Chicken drumsticks, skin on, washed and patted dry

Marinade-
1/4 cup Olive oil
1 Lemon, juiced and zested
5 Garlic cloves, minced
3 tbsp Zaatar (za’atar)
1 tsp Salt, or to taste
1 tsp Crushed black pepper
1/2 tsp Turmeric powder
1/2 tsp Cinnamon powder
Sumac, optional – to sprinkle over once cooked.
Fresh parsley, finely chopped for garnish

Method
Step 1 – In a large oven proof dish, add the chicken pieces. Whisk to combine all the marinade ingredients and rub over the chicken (and under the skin). Cover and refrigerate for a few hours or overnight.

Step 2 – Heat the oven to 190C/fan 170C/Gas 5. Add 1/4 cup of water to the base of the dish and place on the middle shelf in the oven. Cook for 40-45 mins, turning and basting half way through. Check the chicken is cooked through with a meat thermometer.

Step 3 – Serve with tabbouleh, a yogurt dip and flatbread 🫓! Enjoy.
