Cajun Chicken Pasta 🔥

It’s World Pasta Day! Here’s the recipe for my creamy cajun chicken pasta. I hope you all enjoy it as much as I do!

Ingredients:
For the Cajun seasoning
* 2 tsp smoked paprika
* 1 tsp oregano
* 1 tsp thyme
* 1/2 tsp garlic powder
* 1/2 tsp cayenne pepper
* 1/4 tsp black pepper
* 1/4 tsp salt

Everything else –
* 2-3 Chicken breasts, sliced
* 250g Pasta of your choice (I used rigatoni)
* 1 Tbsp olive oil
* 1 Tbsp butter
* 1 onion, diced
* 1 Garlic clove, minced
* 1/2 Green pepper, sliced
* 1/2 Red pepper, sliced
* 2 cups Double cream
* 1/4 tsp Crushed chilli flakes
* 1/4 cup water
* 50g Grated parmasen (and a little extra to top with before serving)

*Serving suggestion – Garlic bread and a side salad

Method
Step 1 – Mix in your Cajun seasoning with the chicken, making sure it’s all coated.
Step 2 – Cook your pasta, as per packets instructions, drain and set aside.
Step 3 – On medium heat, in a large pan, heat the olive oil. Once hot, add the chicken, and stir fry till cooked through. Remove from the pan onto a plate and set aside.
Step 4- In the same pan, add the butter, once melted, add the garlic, onion, red and green peppers. Stir fry for 6-7 minutes.
Step 5 – Add the remaining ingredients to the veg and also the chicken (and it’s juices). Let it simmer for 10 minutes. Stir in the pasta and you’re done! Top with some more parmesan before serving!
