BRUSCHETTA CHICKPEA BOWL!! Ok, I know bruschetta actually refers to the toasted bread under the tomato topping, but I couldn’t think of a better name, so if you have any better suggestions, let a girl know 👇🏻🍅

Quinoa, chickpeas, tender kale, chopped basil tomatoes, banana peppers, red onion, olive oil, lemon, and balsamic glaze!! An Italian-inspired, plant-based bowl that is SO easy and also filled with nutrients 🧄🥬🌶

This is more of a loose recipe, but here’s what I did:

Massaged some kale with olive oil and salt to get it nice and soft and less bitter — added to a bowl with quinoa and chickpeas (probably used about 1 cup quinoa and 1/2 can chickpeas).

Made a little bruschetta tomato topping mixture by chopping 2 medium heirloom tomatoes and mixing it with 2 minced garlic cloves, fresh basil, a drizzle of olive oil, and some salt and pepper (this is enough for 2 bowls).

Added the tomato mixture to the bowl along with some jarred banana pepper slices, thinly sliced red onion, and fresh parsley. Squeezed on some lemon, drizzled on some olive oil, added a pinch of oregano and crushed red pepper, and finished it all off with some balsamic glaze!
