baked cod with charred tomato chimichurri!
I saw @michaeltchao make charred tomato chimichurri and was so inspired!! chimichurri is a South American sauce typically made with parsley, minced garlic, oregano and vinegar. Adding the cilantro and the charred tomatoes definitely makes my version untraditional, but it’s a fun spin!
