Aloo Gosht (lamb & potato curry)

Aloo gosht is my comfort food. My go to in times of happiness, sadness, celebration , you name it! In fact this recipe is PURE GOLD, taught by my father and has always bought our family together at the dinner table. Tender meat and potatoes cooked in a spicy, aromatic masala base. Served best with basmati rice! 🇵🇰

Ingredients
1/4 cup Oil
1 kg Lamb back chops from @saffron_alley (gifted), wash and pat dry.
5 Potatoes, peeled & cut into 3 inch pieces
2 Medium Onions, finely diced
4 Tomatoes, blitz till smooth or almost
1 tbsp Garlic and 1 tbsp Ginger, finely grated
1 tbsp Ground coriander
1 tsp Cumin seeds or powder
1 tsp Kashmiri Red chilli powder, or to taste
1/4 tsp Turmeric
1/4 tsp Ground black pepper
1 Small cinnamon stick
A pinch of ground cloves
2 Green cardamom pods
2 Black cardamom pods
1 1/2 tsp Salt, or to taste

Garnish –
Fresh coriander, finely chopped
1/4 tsp Garam Masala
Green chillies (optional)

Method
Step 1 – In a large pot, on medium heat, add the oil. Once hot, add the onions, and fry until golden (not brown). Add the garlic, ginger and sauté till fragrant. Now add the meat and fry until it turns white-ish.

Step 2 – Add all of the dry spices, combine to coat the meat and sauté for a few minutes. Now add the tomatoes and a 1/4 cup of water. Stir well, cover and cook for 45 mins, and until the oil separates from the tomatoes. Stir occasionally.

Step 3 – Whilst you’re waiting, in a pan, on medium heat, add 2 tbsp oil. Once hot, add 1/4 tsp cumin seeds and the potatoes. Fry until half cooked. Remove from the pan and set aside. This is optional, if you don’t want to do this, skip to the next step!

Step 4 – When the oil separates, turn the heat to high and whilst stirring, fry until most of the water has dried. Add the potatoes and sauté for a few minutes. Then add 2 cups of water and stir. Turn the heat down, cover and simmer until the meat is tender and cooked through.

Step 5 – Turn off the heat, add in the chillies, fresh coriander and sprinkle over the Garam masala! Enjoy 👸🏻
