I saw @girlfromcalifornia make this sushi salmon bake, and I knew I needed it immediately!!! It was worth the two fingers I cut while making this dish 😉 (peep the bandaid).

To make (no full recipe here, I just eyeballed a bit)

Remove salmon skin and cube the salmon (I used 2 filets). Add it to a bowl along with some finely chopped scallion (I used about 2 stalks and saved some extra for the end), some kewpie mayo, sriracha, and a splash of soy sauce.

Mix together some rice with a splash of rice vinegar and ponzu (the other two gals used mirin here, but I didn’t have). Spread the rice at the bottom of the skillet, top with your salmon, and bake for 15 minutes at 400F.

When skillet is done, top with sliced cucumbers, avocado, furikake, more scallion, and more mayo and sriracha. Eat with seaweed sheets, if desired!
