Spinach & Butter Bean Curry 🍛

Here’s another quick and easy weeknight dinner. A nutritious meal ready in 30 minutes and leaving you unbelievably satisfied!! 🤍

Ingredients
400g Butter beans (tinned- drained)
150g Baby spinach
1/4 cup Oil or ghee
3 Garlic gloves
1/2 Inch piece Ginger
1 Small onion, roughly chopped
2 Tomatoes, roughly chopped
1 tsp Tomato purée
Salt, to taste
1 tsp Curry powder (mild)
1 tsp Garam masala (Shan brand)
1 tsp Cumin powder
1 tsp Coriander powder
1 tsp Dried fenugreek
1/2 tsp Red chilli powder, or to taste
Fresh coriander, finely chopped
Green chilli, finely sliced (optional)

Method
Step 1 – Blitz the garlic, ginger, onions and tomatoes into a paste.
In a medium sized pan, on medium heat, add the oil, once hot, add the paste. Fry for 5-6 minutes, until the oil starts to separate. Now add the dry seasonings (except the fenugreek) and tomato purée. Mix in well and fry for 1 minute.
Step 2 -Add in the butter beans and stir fry for 2 minutes, now add the spinach and stir fry till almost wilted. Next add 1/2 cup of water, fenugreek and simmer for 15 minutes.
Step 3 – Top with coriander and green chillies and serve with steamed rice! Enjoy!!!
