Zucchini Pancakes (aka mucver in Turkish cuisine!) with Smoked Salmon, Lemon Marinade, Greek Yogurt, and Chives!

It’s zucchini season and it’s time to make these for breakfast lunch and dinner!!

RECIPE (serves 2-3)
2 large zucchini, shredded/grated
3 eggs
1/2 cup regular flour or 3/4 cup almond flour
2 cloves garlic, minced
1/4 cup chopped onion
2 tbsp finely chopped chives
2 tbsp oil
1/4 cup Greek yogurt
4 oz smoked salmon

Lemon Marinade
2 tbsp olive oil
Juice of 1 large lemon
1 tsp dried oregano
1/2 tsp crushed red pepper

Salt the grated zucchini, and using a cheesecloth or nut milk bag, squeeze out as much water as you can out of the zucchini (keep squeezing until you feel like you can’t anymore). Discard the water. Add zucchini to a bowl along with eggs, flour, garlic, onion, and chives, mix together, and season with black pepper.

Prepare your marinade by mixing ingredients together in a small bowl.

Heat up 2 tbsp olive oil in a large pan on medium high heat. Using your hands or a spoon, add the zucchini batter to the pan in a pancake shape, and cook for a few minutes on each side until golden and crispy. Transfer to a paper towel lined plate to drain out excess oil.

Top each pancake with a dollop of greek yogurt and a couple small pieces of smoked salmon. Drizzle on the lemon marinade, and sprinkle with more fresh chives.
