Jamaican Style Chicken Curry 🍛

Slow cooker, Jamaican inspired chicken curry. Sweet, spicy and exploding with flavour! The chicken is so tender and juicy, it’s one of my favourite summer curry recipes and so easy to make! I’ve used my new sizzle and stew slow cooker from @crockpotuk (Ad).

Ingredients
500g Chicken thighs (bone in, with or without skin)
2 tbsp Vegetable oil
2 tbsp Jamaican Curry powder (or to taste)
1 tsp Dried thyme
Salt, to taste
1/2 tsp Red chilli powder (optional)
1 Chicken stock cube,dissolved into 200ml water
Tinned Pineapple chunks (juice reserved)
1 tsp Garlic paste
1 tsp Ginger paste
1 Red pepper, cubed
1 Yellow pepper, cubed
1 Red onion, cubed
1 Scotch bonnet, whole (discard seeds)
1 tsp Corn flour

Method –
Step 1 – Coat the chicken thighs in 1 tbsp of curry powder and a little salt. Let that sit for 30 minutes.
Remove the bowl from the crockpot and place it on your stove. Turn the heat to high and add the oil, once hot, sear the chicken pieces. Remove and set aside. Leave the oil in the bowl and add the ginger and garlic paste. Fry till fragrant.

Step 2 – Put the bowl back into the crockpot. Turn the setting to high. Add in the chicken, reserved pineapple juice, pineapple chunks, chicken stock, 1 tbsp curry powder, salt, red chilli powder, thyme and scotch bonnet. Cover and let it cook for 2 hours.

Step 3 – Remove some of the liquid from the bowl. Mix the corn flour into it and add it back to the bowl. Add the onions, red and yellow peppers, stir well and cook for another 45 minutes.

Step 4 – Garnish with some parsley and serve with white rice! Enjoy!
