Potato & Cauliflower Masala (aloo gobi)

A great meat free meal to satisfy your taste buds! Enjoy as a main or a side, this recipe is for all! I enjoy mine with parathas or roti.

Ingredients – serves 2/3
2 tbsp Vegetable oil or ghee
2 Large potatoes , peeled and cubed
1 Cauliflower, cut into small florets
1 Large onion, chopped
2 Tomatoes, chopped
1 tsp Garlic paste
2 tsp Ginger paste
1 tsp Red chilli powder (or to taste)
1/2 tsp Garam masala (optional)
1/2 tsp Amchur (mango powder, optional)
1 1/2 tsp Coriander powder
1 tsp Cumin seeds
1/2 tsp Turmeric powder
1 tsp Cracked black pepper
1 tsp Salt
2 tbsp Lemon juice
2 Green chillies, seeds discards and cut into slits.
A handful of fresh coriander, finely chopped

Method –
Step 1 – In a large pan, on medium heat, add the oil/ghee. Once hot, add the cumin seeds. When they start to crackle add the onions, and sauté till golden brown. Then add the garlic and ginger paste and sauté for a further 1 minute.

Step 2 – Add the tomatoes, and all of the seasoning/spices, mix well. Now add the potatoes and cauliflower, making sure they are coated in the masala. Sauté for 5 minutes on high heat.

Step 3 – Bring the heat down to low and add a cup of water. Cover with a lid and cook until the potatoes are soft but still have a little bite (around 10-15minutes).

Step 4 – Stir in the lemon juice and top with fresh chillies and coriander! Enjoy!
