fried eggs over Greek yogurt with sizzled scallion oil! pulled inspo from Turkish Çılbır (eggs served over yogurt) and Chinese Scallion Oil to make this simple breakfast dish!

To make, start by making the scallion oil. Thinly slice 4 scallion stalks, and add to a bowl along with 2 cloves minced garlic and a pinch of chili powder (I used @diasporaco Guntur Sannam Chillies but Aleppo pepper and would also work well)! Heat up about 1/3 cup olive oil in a small saucepan until it just begins to smoke, then pour over the bowl. Stir and let sit while you prepare the rest of the dish!

Spread a spoonful of Greek yogurt into a shallow bowl, and top with some salt. Fry up 2 eggs and add them to a bowl and then spoon on some scallion oil! (This serves 1, but you’ll have plenty of scallion oil left to serve more!)

This dish isn’t an accurate representation of either traditional Çılbır or classic scallion oil, but it’s inspired by both ☺️
