Creamy Mushroom Pasta

The creamiest, cheesiest, most tastiest, mushroom pasta you’ll ever try! 💛

Ingredients – serves 4
500g Penne Pasta, cooked as per packets instructions, reserve 1-2 cups of the pasta water.
600g Closed cup mushrooms, sliced or chopped
3 tbsp Salted butter
250ml Double cream
2 tsp Vegetable umami (I use @yondu.uk)
1 small Brown onion, finely diced
4 Garlic cloves, minced or grated
50g Parmesan, grated
10g Fresh parsley, chopped
Salt, to taste (if needed)
Cracked black pepper, to taste

Method
Step 1 – In a large pan, on medium heat, add the butter, once melted, add the onions and sauté till soft. Now add the garlic and sauté till fragrant. Add in the mushrooms and turn the heat up, stir fry till most of the liquid has evaporated and they are slightly browned.

Step 2 – Lower the heat and add the cream, parmesan, black pepper, parsley and umami liquid. Stir till the sauce starts to thicken. Now add the cooked pasta, 1 cup of pasta water and stir to combine. (If too thick add some more pasta water).

Step 3 – Top with some more parmesan and serve with garlic break or a salad! Enjoy ☀️
