Moroccan Style Chicken 🥘

I love the fresh and vibrant Moroccan flavours in this recipe especially with that extra kick of spice! 🌶. An easy yet delicious family dinner, for those hectic days! Best served with Couscous or white rice! Try my recipe below!

Ingredients
Marinade-
5-6 Chicken thighs, boneless/without skin
1/2 Lemon, juiced
1 tbsp Harissa paste
2 tbsp Butter or oil, for frying

For the sauce –
4 Garlic cloves, minced or grated
1 Large Onion, cut into slices
1/2 Lemon, juiced
1 1/2 tbsp Honey
1 tbsp Harissa paste
400g Chickpeas (tinned, drained)
400g Cherry or chopped tomatoes (tinned)
1 1/2 tsp Cumin powder
2 tsp Smoked paprika
Salt to taste

Garnish –
Freshly chopped coriander
1 Red chilli, finely sliced (optional)

Method-
Step 1 – In a bowl, add the chicken, harissa paste and lemon juice. Mix to coat well and set aside for 30 minutes
Step 2 – In a large pan, on medium heat, add the butter, once melted, turn the heat up, and sear the chicken. Remove from the pan onto a plate.
Step 3 – In the same pan, leave the butter in and turn the heat to medium. Add the garlic, sauté till fragrant. Now add the Onions and sauté for a minute. Next, add the chickpeas, honey, harissa, tomatoes, cumin, paprika and lemon. Stir well. Return the chicken to the pan, cover and simmer for 20 minutes.
Step 4 – Top with fresh coriander and chillies! Enjoy!
