charred scallion chimichurri recipe!!! I made this one while camping, but you don’t need a campfire to make it, just a stovetop at home 🥰

Chimichurri is an Argentinian sauce made with parsley, minced garlic, oregano and vinegar, and it’s typically served with grilled meats.

My paternal grandparents were from Argentina, and sometimes growing up, they would have us over for a summer bbq, which included, of course, chimichurri. Unfortunately, I never got to make chimichurri with my grandma, so I don’t claim to have some authentic family recipe. And a more traditional chimichurri doesn’t have scallion or cilantro! But I like to experiment 🙂

RECIPE (serves 4+)
1/2 cup chopped parsley
1/2 cup chopped cilantro
4 cloves garlic, minced
4 scallion stalks
1/3 cup olive oil
1/4 cup red wine vinegar (plus more if needed)
Salt & pepper

Add your chopped parsley, cilantro, and minced garlic to a bowl.

Heat a cast iron skillet to medium high heat, and add a drizzle of olive oil. Add the scallions, and cook for a few minutes on each side until they’re soft on the inside and just charred on the outside. Chop up, and add to the bowl with the rest of the herbs.

Add in the oil and red wine vinegar, and a pinch of salt and pepper. Mix together, and more oil/vinegar as needed to get the right consistency. Serve over meat, veggies, fish, whatever your heart desires!
