Mutton Bhuna 🌶

This Pakistani bhuna gosht is a dish I’ve grown up with, tender pieces of meat in a thick spicy masala. I enjoy it most with freshly made tandoori roti yet still so good with rice or naan! There are many variations to this recipe, it mostly depends on which part of the country you’re from. Mine is a Lahori version which is just YUM!!!

Ingredients –
1/2kg Mutton or lamb pieces (small), bone in
2 Onions, finely sliced
2 Tomatoes, chopped
1 cup Vegetable oil (yes, a full cup!)
2 tbsp Garlic paste
1 tbsp Ginger paste
1 tsp Salt, or to taste
1 tsp Turmeric powder
1 tsp Garam masala powder
1 tsp Coriander powder
1 tsp Crushed black pepper
1 tbsp Red chilli flakes
4 Green chillies, slit or whole (discard stem and seeds for less spice)
1/2 cup Fresh coriander leaves, finely chopped

Method –
Step 1 – Heat the oil on medium heat, in a medium/large sized wok or heavy based pot. Add the onions and fry till soft and slightly golden.
Step 2 -Now add the ginger, garlic paste and green chillies. Fry till fragrant.
Step 3 – Next, add in the mutton, salt, turmeric powder and fry till the mutton has browned. Make sure you stir constantly.
Step 4- Add the tomatoes, red chili flakes, garam masala, black pepper. Cover the pot and cook on a low heat till the meat is tender and the tomatoes have separated from the oil. You will be forming a paste from the onions, tomatoes etc, not a gravy. Keep stirring frequently to prevent the meat from getting burnt. If needed, add a little water in between to prevent burning.
Step 5- Top with fresh coriander! Your delicious bhuna gosht is ready to serve!
