Spicy Carrots & Cabbage – Indian style 💥

This simple yet moreish recipe is one to SAVE. Bursting with flavours, easy on the pocket and perfect as a main or side. And guess what, it’s ready in 15 minutes!!!
I enjoy it most with parathas and a little bit of raita. 🌶

Ingredients
2 tbsp Oil or ghee
1 Small cabbage, finely shredded
2 Carrots, peeled and finely cut length ways
2 Green chillies, finely sliced (optional)
1 Onion, finely sliced
1/2 tsp Brown mustard seeds
1 tsp Cumin seeds
1 tsp Salt, or to taste
1/4 tsp Turmeric powder
1/4 tsp Garam masala
A pinch of Asafoetida (hing)
1/2 tsp Kashmiri Red chilli powder, or to taste

Method
Step 1 – In a large pan on medium/high heat, add the oil/ghee, once hot, add the brown mustard seeds and cumin seeds. Once they start to spluttering add the onions and sauté for 30 seconds. Now add the remaining dry seasonings and sauté for another 30 seconds.

Step 2 – Add the carrots and stir fry for a 5 minutes, then add the cabbage and chillies, and stir fry until the cabbage has softened but still has a bite.
Top with Fresh coriander and serve! Enjoy
