My super comforting, seafood curry is one to try! Made with premium selected mussel meat, king prawns and squid rings from @seafoodbysykes [ad]. A beautiful mildly spiced curry which is perfect for this season! Autumn is all about comfort food!

Ingredients – serves 4
800g Cooked premium Seafood selection, defrosted. from @seafoodbysykes
1/4 cup Oil
400g Chopped tinned tomatoes
1 Onion, finely diced
5 Garlic cloves, minced/finely grated
1/2 inch piece Ginger, finely grated
1/2 Lemon, juiced
5 Dried curry leaves
1 tsp Garam masala
2 tsp Cumin powder
4 Black peppercorns (or 1/2 tsp crushed black pepper)
1 tsp Kashmiri chilli powder, or to taste
1/2 tsp Turmeric powder
Salt, to taste
1/4 cup Water (optional)
A handful of Fresh Coriander, finely chopped
1 Green chilli, finely sliced (optional)

Method
Step 1 – In a pan, on medium heat, add the oil. Once hot, add the onions, garlic, ginger, and sauté for a minute. Then add all of the dry spices, sauté for a further minute.

Step 2 – Add the tomatoes and fry until the oil starts to separate from the masala (4-5 minutes). Now add the seafood mix and sauté for a minute. Next, add the water (optional for a thinner consistency), lemon juice, coriander and mix well. Bring the heat down to low, cover and cook for a further 10 minutes.

Step 3 – Remove from the heat. Top with some fresh coriander, green chillies and serve with basmati rice! Enjoy! ☺️
